Mediterranean Chickpea Salad

Lunch is one of those meals that I so often skip, but when I do make lunch I like something light, quick and easy to prepare. Besides a sandwich what could be easier than a salad? This Mediterranean Chickpea Salad is the easy lunch recipe that hits all three of my qualifications and its delicious to boot!



Mediterranean Chickpea Salad


Ingredients for this Easy Lunch Recipe

  • Salad

    • 1 can (15 oz) chickpeas, drained and rinsed

    • 1 cup cherry tomatoes, halved

    • 1 cucumber, diced

    • 1/4 red onion, finely sliced

    • 1/4 cup Kalamata olives, sliced

    • 1/4 cup crumbled feta cheese (optional)

    • 2 tbsp fresh parsley, chopped

  • Dressing

    • 3 tbsp olive oil

    • 1 tbsp red wine vinegar (or lemon juice)

    • 1 tsp Dijon mustard

    • 1 clove garlic, minced

    • 1/2 tsp dried oregano

    • Salt and pepper, to taste

Instructions

  1. Prepare the SaladIn a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.

  2. Make the DressingIn a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper until well combined.

  3. Assemble the SaladPour the dressing over the salad and toss gently to combine.

  4. ServeServe immediately or refrigerate for 20-30 minutes to let the flavors meld.
