Quick And Easy Sheet Pan Meal

For my first real recipe I decided to go with one of my favorites. This quick and easy sheet pan meal is great for nights you don't want to spend all that time cooking. It also stores and reheats amazingly well! For that reason alone its one of my go to ideas for meal prep. I tend to use smoked sausage but any protein would do really.





Ingredients (Serves 4)

  • Protein & Vegetables:

    • 4 sausages (Italian, chicken, or turkey sausage work well)

    • 2 medium sweet potatoes, peeled and cubed (about 1-inch pieces)

    • 1 large red onion, diced (about 1-in pieces)

    • 2 cups of halved brussels sprouts (optional, for added greens)

  • Seasoning & Spices:

    • 3 tbsp olive oil

    • 1 tsp smoked paprika

    • 1 tsp garlic powder

    • 1 tsp dried rosemary

    • 1/2 tsp ground cumin

    • 1/4 tsp cayenne pepper (optional, for heat)

    • Salt and pepper, to taste

  • Optional Garnish:

    • Fresh parsley, chopped

    • Lemon wedges

  • 10 minutes

Cook Time

  • 30-35 minutes

Calories (Per Serving)

  • ~400-450 calories (depending on the sausage type used)





Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it.

  2. Prepare Ingredients:

    • Peel and cube the sweet potatoes into 1-inch pieces.

    • Slice the red onion into wedges.

    • If using brussels sprout, peel and cut them in half.

    • Slice the sausage into bite size pieces.

  3. Season Vegetables:

    • In a large bowl, toss the sweet potatoes, red onion, and brussels sprout with olive oil.

    • Add smoked paprika, garlic powder, dried rosemary, cumin, cayenne pepper (if using), salt, and pepper. Mix until everything is well coated.

  4. Assemble the Sheet Pan:

    • Spread the seasoned vegetables in an even layer on the prepared baking sheet.

    • Place the sausages on top of the vegetables.

  5. Bake:

    • Roast in the preheated oven for 25-30 minutes, stirring the vegetables halfway through to ensure even cooking.

    • If desired, broil for an additional 2-3 minutes to caramelize the edges.

    • Check that the sausages are cooked through (internal temperature of 160°F for most sausages).

  6. Serve:

    • Sprinkle fresh parsley on top, if desired, and serve warm with lemon wedges for a burst of freshness.

  7. Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the oven or microwave.
